Sweet Medjool dates filled with tangy goat cheese and pecans, wrapped in crisp bacon, and finished with maple and rosemary.

Ingredients

Scale
  • 24 Medjool dates
  • 4 ounces goat cheese, softened
  • 1/2 cup pecan halves, divided
  • 12 thin-cut bacon slices, halved
  • 2 tablespoons pure maple syrup
  • 1 teaspoon finely chopped rosemary
  • 1/4 teaspoon black pepper
  • 24 wooden cocktail picks

Instructions

  1. Prepare: Heat oven to 400°F (205°C). Set an oven-safe rack over a rimmed sheet pan.
  2. Stuff: Slit and pit each date. Fill with about 1 teaspoon goat cheese and a pecan piece, then close gently.
  3. Wrap: Wrap each date with half a bacon slice and secure seam-side down with a pick.
  4. Bake: Bake 20 to 25 minutes, turning once, until bacon is fully cooked and crisp. Brush lightly with maple during the final 3 minutes.
  5. Finish: Rest 5 minutes. Sprinkle with remaining chopped pecans, rosemary, and pepper; serve warm.
