Smoky BBQ brisket, sweet caramelized onions, two melty cheeses, and crispy onions make these golden skillet sandwiches unforgettable.

Ingredients

Scale
  • 2 tablespoons unsalted butter, divided
  • 1 large yellow onion, thinly sliced
  • 1/2 teaspoon kosher salt, divided
  • 8 thick slices sourdough bread
  • 2 cups cooked shredded beef brisket
  • 1/3 cup barbecue sauce, plus more to serve
  • 4 slices provolone cheese
  • 4 slices Colby Jack cheese
  • 1/2 cup crispy fried onions
  • 1 tablespoon neutral oil

Instructions

  1. Caramelize the onion: Melt 1 tablespoon butter over medium-low heat. Add onion and 1/4 teaspoon salt; cook 15 to 18 minutes, stirring often, until deeply golden.
  2. Warm the brisket: Combine brisket and barbecue sauce in a small pan over low heat until hot.
  3. Build the melts: Layer provolone, saucy brisket, caramelized onion, Colby Jack, and crispy onions on four bread slices. Close with remaining bread.
  4. Toast: Spread the outsides with remaining butter. Cook in an oiled skillet over medium-low heat for 3 to 4 minutes per side until crisp and the cheese melts.
  5. Rest and serve: Rest 2 minutes, slice, and serve with extra barbecue sauce.
