Ingredients
Scale
4 large eggs, room temperature
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/3 cup Dutch-process cocoa powder
1 teaspoon baking powder
1/4 teaspoon kosher salt
2 cups frozen dark sweet cherries
1/3 cup granulated sugar, for the filling
1 tablespoon lemon juice
1 tablespoon cornstarch
2 cups cold heavy cream
1/3 cup powdered sugar
4 ounces dark chocolate, shaved
Instructions
Make the compote: Simmer cherries, filling sugar, and lemon juice for 8 minutes. Stir cornstarch with 1 tablespoon water, add, and cook until thick. Chill completely.
Bake the sponge: Heat oven to 350°F (175°C). Line a 10-by-15-inch jelly-roll pan. Whip eggs and sugar until thick; fold in vanilla and sifted dry ingredients. Bake 10 to 12 minutes.
Roll while warm: Turn the cake onto a cocoa-dusted towel, remove parchment, and roll from a short side with the towel inside. Cool completely.
Fill: Whip cream and powdered sugar to medium peaks. Unroll the cake, spread with cream and chilled cherry compote, then reroll without the towel.
Decorate: Chill for 2 hours. Cover with remaining cream, draw bark lines, and finish with chocolate shavings and cherries.
