Ingredients

Scale
  • 1 single 9-inch pie crust, chilled in its plate
  • 2 medium orange sweet potatoes (about 1 1/2 pounds)
  • 6 tablespoons unsalted butter
  • 3/4 cup packed dark brown sugar
  • 1/2 cup evaporated milk
  • 2 large eggs
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3/4 teaspoon kosher salt, divided
  • 3 large egg whites, room temperature
  • 3/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract, for meringue

Instructions

  1. Cook the sweet potatoes: Heat the oven to 400°F (205°C). Pierce sweet potatoes and bake 45 to 60 minutes until completely tender. Cool enough to handle, scoop out 2 cups flesh, and mash until smooth. Reduce oven to 350°F (175°C).
  2. Brown the butter: Melt butter in a light-colored saucepan over medium heat. Cook, swirling, until the milk solids turn amber and smell nutty. Immediately pour into a bowl and cool 10 minutes.
  3. Mix the filling: Whisk sweet potato, brown sugar, evaporated milk, eggs, yolk, vanilla, spices, 1/2 teaspoon salt, and brown butter until smooth. Pour into the chilled crust.
  4. Bake and cool: Bake 48 to 58 minutes until the edges are set and the center has a slight wobble. Cool completely for at least 3 hours.
  5. Make the meringue: Place egg whites, granulated sugar, cream of tartar, and remaining salt in a heatproof bowl over barely simmering water. Whisk until the mixture reaches 160°F (71°C), then beat off heat to stiff glossy peaks. Beat in vanilla.
  6. Toast and serve: Pile meringue over the cooled pie, creating swoops. Toast with a kitchen torch or under a broiler for 30 to 60 seconds, watching constantly. Chill 30 minutes before slicing.

Notes

For best results, verify doneness by the stated temperature and texture cues. Refrigerate perishable leftovers within 2 hours.
