Flaky puff pastry with jammy onions, ripe pear, tangy goat cheese, thyme, and honey.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 large yellow onions, thinly sliced
  • 1/2 teaspoon kosher salt
  • 1 teaspoon balsamic vinegar
  • 1 sheet frozen puff pastry, thawed cold
  • 1 firm ripe pear, thinly sliced
  • 4 ounces goat cheese, crumbled
  • 1 teaspoon fresh thyme leaves
  • 1 large egg beaten with 1 teaspoon water
  • 2 tablespoons honey
  • Black pepper to taste

Instructions

  1. Caramelize onions: Heat oil and butter over medium-low. Add onions and salt; cook 25 to 30 minutes, stirring often, until deep golden. Stir in balsamic and cool.
  2. Prepare pastry: Heat oven to 400°F (205°C). Cut cold pastry into 12 equal pieces and place on a parchment-lined tray. Score a 1/4-inch border without cutting through.
  3. Top: Divide onions among pastry centers. Add pear slices, goat cheese, thyme, and pepper. Brush borders with egg wash.
  4. Bake: Bake 16 to 20 minutes until puffed and deeply golden.
  5. Finish: Cool 5 minutes, drizzle lightly with honey, and serve warm.
