Ingredients
Scale
1 large green cabbage
1 pound lean ground beef
1/2 pound ground pork
1 cup cooked long-grain rice
1 yellow onion, finely diced
3 garlic cloves, minced
1 large egg
1 teaspoon smoked paprika
1 teaspoon dried thyme
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
1 can (28 ounces) crushed tomatoes
2 tablespoons tomato paste
1 tablespoon brown sugar
1 tablespoon red wine vinegar
1 cup beef broth
2 tablespoons chopped parsley
Instructions
Soften the leaves: Core cabbage and simmer in salted water, removing 16 softened outer leaves as they loosen.
Mix the filling: Combine beef, pork, rice, half the onion, half the garlic, egg, paprika, thyme, 1 teaspoon salt, and pepper.
Make the sauce: Cook remaining onion and garlic for 4 minutes, then add tomatoes, tomato paste, sugar, vinegar, broth, and remaining salt.
Roll and assemble: Place 1/3 cup filling on each leaf, fold in the sides, roll tightly, and arrange seam-side down over half the sauce in a baking dish.
Bake: Cover with remaining sauce and bake covered at 350°F (175°C) for 60 minutes, then uncovered 15 minutes. Verify filling reaches 160°F (71°C). Rest 15 minutes.
