Ingredients

Scale
  • 6 bone-in skin-on chicken thighs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small shallot, minced
  • 2 garlic cloves, minced
  • 2 cups fresh or frozen cranberries
  • 1/2 cup chicken broth
  • 1/3 cup balsamic vinegar
  • 1/4 cup pure maple syrup
  • 1 teaspoon chopped rosemary

Instructions

  1. Brown the chicken: Heat oven to 400°F (205°C). Season chicken. Sear skin-side down in an oven-safe skillet for 7 minutes; turn and cook 2 minutes, then transfer.
  2. Build the sauce: Cook shallot for 2 minutes. Add garlic, cranberries, broth, balsamic, maple syrup, and rosemary; simmer 4 minutes.
  3. Roast: Return chicken skin-side up. Roast 22 to 28 minutes until it reaches 175°F (79°C).
  4. Reduce: Transfer chicken and simmer sauce 3 to 5 minutes until glossy.
  5. Serve: Spoon sauce around the chicken, keeping the crisp skin visible.
