Golden chicken thighs and tender orzo in a silky Parmesan sauce with sun-dried tomatoes and spinach.

Ingredients

Scale
  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 cup dry orzo
  • 1/2 cup chopped oil-packed sun-dried tomatoes, drained
  • 2 1/2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 3 cups baby spinach
  • 3/4 cup finely grated Parmesan
  • 1 tablespoon lemon juice

Instructions

  1. Season: Pat chicken dry and season with 3/4 teaspoon salt, pepper, and Italian seasoning.
  2. Sear: Heat oil in a large skillet over medium-high. Sear chicken 4 to 5 minutes per side until golden, then transfer to a plate.
  3. Toast orzo: Lower heat to medium. Cook garlic 30 seconds, then stir in orzo and sun-dried tomatoes for 1 minute.
  4. Simmer: Add broth and scrape up browned bits. Simmer 8 minutes, stirring often. Return chicken and cook 5 to 7 minutes until orzo is tender and chicken reaches 165°F (74°C).
  5. Finish: Stir in cream, spinach, Parmesan, and lemon juice. Rest 5 minutes and adjust seasoning.
