Ingredients
Scale
1 pound linguine
1 pound large shrimp, peeled and deveined
1 pound dry sea scallops
1 1/2 teaspoons kosher salt, divided
1/2 teaspoon black pepper
2 tablespoons olive oil
3 tablespoons unsalted butter
4 garlic cloves, minced
1 cup dry white wine
1 1/2 cups heavy cream
1/2 cup grated Parmesan
1 cup chopped sun-dried tomatoes
4 cups baby spinach
1 lemon
Instructions
Cook the pasta: Boil linguine in salted water until just al dente. Reserve 1 cup pasta water, then drain.
Sear the seafood: Pat shrimp and scallops dry and season. Sear in oil over medium-high heat in batches until scallops are golden and shrimp are opaque; transfer to a plate.
Build the sauce: Lower heat, add butter and garlic, then wine. Reduce by half before stirring in cream, Parmesan, and sun-dried tomatoes.
Combine: Add spinach and pasta, loosening with pasta water until glossy. Fold in seafood and warm for 1 minute.
Finish: Add lemon zest and juice to taste and serve immediately.
