These crispy air fryer ziti fritters hide a gooey mozzarella center inside a savory pasta-and-Parmesan crust.

Ingredients

Scale
  • 8 ounces ziti pasta
  • 1 cup whole-milk ricotta
  • 1 large egg
  • 3/4 cup grated Parmesan, divided
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1 cup shredded low-moisture mozzarella
  • 1 cup panko breadcrumbs
  • Olive oil spray
  • 1 cup warm marinara sauce, for serving

Instructions

  1. Cook pasta: Boil ziti until very tender. Drain well, cool slightly, and roughly chop.
  2. Make mixture: Combine pasta, ricotta, egg, 1/2 cup Parmesan, Italian seasoning, garlic powder, salt, and mozzarella. Chill 20 minutes.
  3. Shape: Form 12 compact patties. Mix panko with remaining Parmesan and press onto every side.
  4. Air fry: Preheat air fryer to 390°F (200°C). Spray fritters and basket lightly. Cook in batches 10 to 14 minutes, turning once, until crisp.
  5. Serve: Rest 3 minutes and serve with warm marinara.
