Ingredients

Scale
  • 1 1/2 pounds boneless skinless chicken thighs
  • 2 medium sweet potatoes, cut into 3/4-inch cubes
  • 1 small red onion, cut into wedges
  • 2 tablespoons olive oil, divided
  • 1/3 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat oven: Heat oven to 425°F (220°C). Toss sweet potatoes and onion with 1 tablespoon oil, half the salt, and pepper. Roast 12 minutes.
  2. Make glaze: Whisk maple syrup, Dijon, vinegar, garlic, paprika, thyme, remaining oil, and salt. Reserve 2 tablespoons in a clean bowl.
  3. Add chicken: Turn vegetables. Nestle chicken among them and brush generously with glaze.
  4. Roast: Roast 20 to 25 minutes until chicken reaches 165°F (74°C) and potatoes are tender.
  5. Finish: Brush chicken with reserved clean glaze and rest 5 minutes before serving.
