Scale
1 center-cut salmon fillet (3 pounds), skin on
1/3 cup pure maple syrup
3 tablespoons white miso
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon grated fresh ginger
2 garlic cloves, grated

Make the glaze: Whisk maple syrup, miso, soy sauce, rice vinegar, ginger, garlic, and sesame oil until smooth.

Roast: Roast for 12 minutes, brush with more glaze, and continue for 4 to 8 minutes until the thickest part reaches 125 to 130°F (52 to 54°C).
Broil: Broil for 1 to 2 minutes, watching closely, until the surface bubbles and caramelizes.
Finish: Rest for 5 minutes, then scatter with scallions, pomegranate arils, and sesame seeds.
