Ingredients
Scale
3 cups heavy cream
6 green cardamom pods, lightly crushed
2 strips orange peel
1 vanilla bean, split, or 2 teaspoons vanilla extract
8 large egg yolks
1/2 cup granulated sugar
1/4 teaspoon kosher salt
8 teaspoons superfine sugar, for brûlée topping
Instructions
Infuse the cream: Heat cream with cardamom, orange peel, and vanilla until steaming. Cover, remove from heat, and infuse for 20 minutes; strain.
Mix the custard: Heat oven to 300°F (150°C). Whisk yolks, sugar, and salt gently. Slowly whisk in the warm cream without creating foam.
Bake: Divide among eight 4-ounce ramekins in a roasting pan. Add hot water halfway up the sides and bake 30 to 40 minutes until edges are set and centers wobble.
Chill: Cool, cover, and refrigerate for at least 4 hours or up to 2 days.
Caramelize: Blot the surfaces dry, sprinkle each with 1 teaspoon superfine sugar, and torch until amber and glassy. Rest 2 minutes before serving.
