Ingredients
Scale
1 boneless skin-on turkey breast half (about 1 1/2 pounds)
1 teaspoon kosher salt, divided
1/2 teaspoon black pepper, divided
3 tablespoons unsalted butter, softened and divided
1 teaspoon chopped fresh sage
1/2 teaspoon fresh thyme leaves
2 cups cubed day-old bread
1/3 cup diced onion
1/3 cup diced celery
1/2 cup low-sodium chicken broth
1 medium sweet potato, peeled and cut into 3/4-inch cubes
6 ounces green beans, trimmed
1 tablespoon olive oil
2 tablespoons whole-berry cranberry sauce, for serving
Instructions
Start the turkey: Heat the oven to 425°F (220°C). Pat the turkey dry and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Mix 1 tablespoon butter with sage and thyme and rub it under and over the skin. Place on one side of a parchment-lined rimmed sheet pan and roast 20 minutes.
Prepare the stuffing: Melt 1 tablespoon butter in a skillet. Cook onion and celery for 5 minutes. Toss with bread, broth, 1/4 teaspoon salt, and a pinch of pepper. Shape into a compact mound on a piece of foil and fold up the edges.
Add the sweet potato: Toss sweet potato with half the olive oil, 1/4 teaspoon salt, and remaining pepper. Add it to the pan with the foil-lined stuffing and roast 20 minutes.
Add the green beans: Toss green beans with remaining oil and add to the pan. Dot the stuffing with the final tablespoon butter. Roast 12 to 18 minutes more.
Check and rest: Remove the turkey when its thickest part reaches 165°F (74°C). The sweet potato should be tender, the stuffing crisp on top, and the beans browned in spots. Rest turkey 10 minutes before slicing.
Serve: Divide the sliced turkey, stuffing, sweet potato, and green beans between two plates. Spoon cranberry sauce alongside.
