A bright non-alcoholic fall drink made with apple cider, caramel, ginger beer, and sparkling water.

Ingredients

  • 2 tablespoons coarse sugar
  • 1/2 teaspoon ground cinnamon, divided
  • 1/4 cup (60 ml) caramel sauce, divided
  • 2 cups (480 ml) chilled fresh apple cider
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 small pinch fine sea salt
  • 1 cup (240 ml) chilled non-alcoholic ginger beer
  • 1 cup (240 ml) chilled plain sparkling water
  • Ice cubes, for serving
  • 1 small red apple, thinly sliced, for garnish
  • 4 cinnamon sticks, for garnish

Instructions

  1. Prepare the rims: Stir the coarse sugar with 1/4 teaspoon of the cinnamon on a shallow plate. Spread 2 tablespoons of the caramel sauce on a second plate. Dip the outer rim of four glasses lightly into the caramel, then into the cinnamon sugar.
  2. Dissolve the caramel: Pour 1/2 cup of the apple cider into a pitcher. Add the remaining 2 tablespoons caramel sauce and whisk until smooth.
  3. Season the cider: Whisk in the remaining 1 1/2 cups apple cider, lemon juice, vanilla, salt, and remaining 1/4 teaspoon cinnamon.
  4. Add the bubbles: Immediately before serving, pour in the chilled ginger beer and sparkling water. Stir slowly once or twice to combine without flattening the bubbles.
  5. Serve: Fill the prepared glasses with ice and divide the mocktail among them. Garnish each glass with thin apple slices and a cinnamon stick, then serve immediately.

Notes

The still cider mixture can be refrigerated for up to 24 hours. Add the ginger beer and sparkling water only when ready to serve. Confirm that the ginger beer is labeled non-alcoholic if complete alcohol avoidance is required.
